Zýmē is as indispensable to Valpolicella, as yeast is to vinification. The term zýmē, in ancient Greek means yeast, but the word represents much more than the name of this winery – it is a symbol of Celestino Gaspari’s devotion to nature. Although recently established by Gaspari himself in 2003, he grew up in the wine industry and worked for many years beside Valpolicella’s iconic figure, Giuseppe Quintarelli – the Grandfather of Amarone – who also happens to be his father-in-law. This extremely talented individual, with his avant-garde philosophy has become one of the most remarkable and distinctive producers in the region. Located in the heart of the Valpolicella Classico area, the age-old sandstone quarry is home to the contemporary, boutique winery. Crafting wines that are reputed for their seamless synthesis of the five elements of wine-making – earth, sun, water, vine, and man – each bottle is an icon of the synergy found between nature and history.

Ripe, rich and big, Harlequin is a serious wine. A blend of 15 grape varieties, the decadent fruit layers and smooth textures give this Zýmē production an old-school feel. Produced only in the best years, this rare wine is a blend of both red and white varieties; Garganega, Trebbiano Toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Teroldego, Croatina, Oseleta, Sangiovese and Marzemino. Harlequin’s depth and complexity distinguishes it from its younger brother Kairos, thanks to a maturation of 30 months in new French oak barrels and an additional 2 years in bottle. The complexity of flavors, from fruit and spices to higher alcohols, Harlequin is a great wine to serve with ornate dishes, made with game meat, strong cheeses or flavorful spices.


The colorful label alludes not only to Harlequin’s costume made of many different pieces, but also to the 15 unique grapes used in Kairos’ blend. The mosaic of fruit flavors that await, make this red one of Zýmē’s most expressive wines, using grapes from all of the estate’s vineyards. The blend includes Garganega, Trebbiano Toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Teroldego, Croatina, Oseleta, Sangiovese and Marzemino. Layered and rich, this silky red has a lively acidity with flavors of black cherries, fruit marmalade and sweet spices. The supple tannins make this the ideal pairing for hearty meat dishes, full-flavored cheeses and even spicy Indian plates.


Produced from the oldest vineyards, some as old as 50 years old, La Mattonara represents the seductive side of Zýmē. This Riserva is only produced in the very finest years, with an even more rigorous, quality-conscious selection of grapes than the Amarone Classico. La Mattonara is a complex, all-encompassing wine with notes of dried berries, balsamic and truffle. The grapes are first dried naturally for ninety days, and then fermented with the skins and ambient yeasts for at least sixty days. The wine is matured for about nine years in Slavonian oak casks before being bottled. This long aging develops the wine’s rich, sophisticated flavors. It is a blend of 40% Corvina, 30% Corvinone, 15% Rondinella, 10% Oseleta and 5% Croatina. The perfect pairings include aged cheeses, specifically Italian, as well as grilled, roasted or boiled meats.


This ruby red Amarone Classico della Valpolicella, produced only in exceptional vintages, is the perfect bottle for any special occasion. Full-bodied with notes of dark cherries, plums and spices, the smell of succulence on the nose is echoed on the palate, with an excellent persistence. A blend of 40% Corvina, 30% Corvinone, 15% Rondinella, 10% Oseleta and 5% Croatina; the grapes are first dried naturally for three months, before being pressed and fermented using native yeasts. The wine then matures for five years in large Slavonian oak barrels, and another year in bottle. Serve with seasoned cheeses or red meat dishes, or even after dinner with a good Grana Padano.


A great classic from Zýmē, that just keeps getting better and better every year, Valpolicella Classico Superiore is simply mouthwatering. It is a smooth, satisfying red with notes of Morello cherries, dried figs and sweet spices. A blend of 40% Corvina, 30% Corvinone, 25% Rondinella and 5% Oseleta, the grapes go through two fermentations, then sit on the skins of Amarone, as in accordance with the Ripasso Classico method. Aged for more than three years in large Slavonian oak ovals, the wine is bottled and rested for six months before being released. This is the ideal accompaniment for lighter meals and finely sliced dry meats.


Like the label showing quick, light touches, the Valpolicella Reverie is a fresh everyday drinking wine. With a younger feel, this light-bodied Valpolicella is full of citrus notes and hints of raspberries, spices and herbs. Made from a blend of 40% Corvina, 30% Corvinone, 25% Rondinella and 5% Oseleta, this Valpolicella is a great pairing for aperitifs and snacks, like dried meats and soft cheeses.


The name of this dry white, From Black to White, denotes the natural transformation of the Rondinella grape that has been altered from a red grape into a white. This fresh, crisp white from Zýmē is full of delicate notes of wildflowers, apple blossoms and citrusy herbs, making it the perfect aperitif wine. Clean-cut on the palate, From Black to White is made from 60% Rondinella Bianca, 15% Gold Traminer, 15% Kerner and 10% Incrocio Manzoni. Apart from drinking this white on its own, try it with fish dishes, risottos or soups.
